Starters

 

  • Cold mint cream from the garden with poached free-range egg, crispy butter bread and slices of Iberian ham.
  • Shots filled with Monalisa potato parmentier, with slices of rock octopus sautéed with mojo picón and smoked air.
  • Garden salad with a wonton pasta base with Mediterranean prawns, croutons, green asparagus and chardonnay vinaigrette.

Main Course

 

  • Uruguayan Angus beef cheek, slow braised with Empordà rosé wine, with creamy beluga lentil base and vegetable chips. + Supplement € 2
  • Pelegrí-style cannelloni (beef, pork and chicken) with white bechamel, gratin with Emmental cheese (from France).
  • Centrolophus “Black Fish” with green sauce, seasonal peas, free-range hard-boiled egg, white asparagus and tempura onion rings.

 

  • Creamy rice with short rib, sausages, well-raised chicken and seasonal peas. + Supplement € 3

 

Desserts

 

  • Three continents cake with a cocoa sponge base, 66% dark chocolate, 55% Itakuja, 40% Jivara with a touch of vanilla and cat’s tongue.
  • Timbale of sautéed strawberries with sherry vinegar, quenelle of frozen cream, red fruit foam and crunchy chocolate cookie.
